Since I bought my new Blender Smoothie Maker, I’ve been surviving the summer by making chonky breakfast smoothies. The weather is hot and humid and I find it really hard sometimes to wake up ready to face the day so that’s when I know, I need something quick and filling to kick-start the morning. This Vegan Summer Smoothie does just that!
A protein morning boost
Easy and highly customizable, this smoothie recipe includes Greek soy yoghurt, soy milk and crunchy mixed seeds which makes it a great source of vegan protein. Seeds are a new favourite of mine, I’ve always really liked them – especially pumpkin and sunflower seeds – but I just recently really understood their value in a balanced diet. They’re high in fibre, high in magnesium and yes, you guessed it, loads of protein! I use a mix of flaxseeds, chia, sunflower, sesame and pumpkin seeds, which is super yummy.
As for the milk and yoghurt, I prefer soya-based products – which have roughly 8-12gr of proteins per 200ml/gr – but you can use any other substitute. Almond milk, for example, is a good option if you want to keep the protein value up and it’s real tasty!
Fibres galore
Fruits and vegetables are the kings and queens of fibre. This vegan protein summer fruits smoothie uses 4 different types of fruit, which makes it a great and easy way to get your daily fibre intake. Vegan Summer Smoothie
Equipment
- 1 Blender or smoothie maker
- 1 Sharp knife to dice the fruit
- 1 Cutting board
Ingredients
- 1 medium Banana
- 1 small Apple
- 40 gr Blueberries
- 50 gr Strawberries
- 90 ml Soy milk or alternative of your choice
- 70 gr Greek soy yoghurt or alternative of your choice
- 1 tbsp Mixed milled seeds of your choice
- 1 tbsp Cocoa powder
Instructions
- Dice your fruits in chunks according to the size of your blender.
- Add the fruit chunks, milk, yoghurt and seeds to the blender or smoothie maker. You can adjust the quantities of the milk and yoghurt to have a thicker or thinner consistency.
- Blend until all the ingredients appear well mixed together, add the cocoa powder and blend a bit more. That's it – your smoothie is ready to be enjoyed!Consume straight away.
