In need of a refreshing summer breakfast to fight the heat? Sweat no more – This Summer Yoghurt and Fruits Bowl will refresh your mind and body, giving you all the right nutrition to start your day!

When choosing the fruits for my Summer Yoghurt and Fruits Bowl, I try to pick something that’s in season. For example, berries are a really good choice for the summer months and you can find them in abundance from May to September. Though beware that some berries like Strawberries can cause slight irritation if you suffer from GERD/GORD so – I know they’re delicious but – consume them in moderation. With the berries, bananas are always my first pick for anything breakfast-related and these are in fact helpful when it comes to stomach acidity so make sure to add them to your weekly shop!

The Summer Yoghurt and Fruits bowl is very simple and quick to make and highly customizable. I use soya yoghurt instead of animal-derived yoghurts and almonds + puffed rice but you can use any greek yoghurt or any muesli/cereal you like. This is your chance to get creative!

Equipment

  • 1 Bowl
  • 1 Knife and chopping board

Ingredients
  

  • 50 gr soya greek yoghurt
  • 2 tbsp wholegrain puffed rice
  • 10 unit almonds
  • 2-4 unit strawberries
  • 1 unit banana
  • 2-4 unit bluberries
  • any other fresh fruit you like!

Instructions
 

  • Scoop the soy yoghurt into a breakfast bowl.

  • Thoroughly wash the strawberries and blueberries. Cut the banana into slices and halve the strawberries, then arrange the sliced fruits plus the blueberries on top of the yoghurt.

  • Add the almonds and the puffed rice to garnish. Your summer yoghurt bowl is ready to be enjoyed!
    If you want a bit more sweetness, drizzle with maple syrup or honey!
